It’s almost the official start to summer! What a great time for treats, fresh fruits, grilling, and outdoor feasting.
I have been doing a Whole30/Paleo meal plan. One of the things that is removed from the diet is processed sugar. What desserts can you have on Whole30 which even forbids even stevia?
I purchased a popsicle mold from the store and started making fresh fruit and coconut milk pops. Thanks to my trusty magic bullet, these are quick and easy to make.
Blackberry, Blueberry, Mango, +Coconut milk=yummo!
Recipe:
1/4 cup of organic coconut milk
1/2 cup of blueberries
1/4 cup of blackberries
1/4 cup of mango
Blend it, pour it in the mold, freeze for several hours.
The first batch I made I included some coconut water. I would not recommend this because the fruit, if you do not add enough, will separate and you have fruit ice. See the photo below.
Tropical fruit blend on the left (strawberries, kiwi, blueberries, blackberries, mango, pineapple) and blueberry on the right.
These treats are low calorie, whole food, delicious, tasty, and a much better alternative to your freezer purchased sugary ones. If you have a magic bullet or blender, you can easily make these!
